The Story Begins...
with the enthusiasm of creating a food haven for people with specialty diets, Bonnie founded her first company, NutriAlley (www.nutrialley.com), in 2015.
Knowledge about specialty diets, especially allergy-friendly foods and inclusivity, was scarce in her hometown Hong Kong. With the vision and heart to educate and equip the next generation, she founded the Freefrom Foods International Association (FFIA) in 2018 with As One Cooking Academy being her firstborn in the gluten-free education sector.
Achieved World Record
In 2018, Bonnie led her team to achieve a historical Guinness World Record at the Hong Kong Conventional and Exhibition Centre with 1,111 gluten-free bread assembling the word ‘F-R-E-E’ which represents freedom.
Through the event, she hoped to promote gluten-free cooking and inclusivity.
The Teaching Journey
In the beginning, Bonnie started with physical classes to share her knowledge and recipes with many.
Since 2019, she explored the possibility of conducting live-streaming and self-learning online classes to provide greater convenience for parents and busy urbaners.
This paved the road for the following years as the global pandemic prevailed and many stayed home.
As One Cooking Academy also became the first cooking school that offer online live classes at that time and received media coverage.
The Training
To deepen her skillsets and understand the needs in the market, Bonnie started her ‘internship’ at NutriAlley working as a full-time chef in the commercial kitchen of the retail shop.
She has been on the journey of continual improving, testing and developing new gluten-free products for the benefit of the people.
Over the years, Bonnie has gained unprecedented knowledge and understanding about gluten-free food making, commercial kitchen management and commercial product development.
Her expertise in gluten-free food making and experiences in the commercial sector is what made As One Cooking Academy unique.
